Vegan Recipe Creamy Mushroom Risotto with Roasted Asparagus

Recipe: Creamy Mushroom Risotto with Roasted Asparagus

Ingredients:

  • 1 cup Arborio rice

  • 4 cups vegetable broth
  • 1 cup mushrooms, sliced
  • 1 onion, finely chopped
  • 3 cloves of garlic, minced
  • 1 cup dry white wine (optional)
  • 1 tablespoon nutritional yeast
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • Salt and pepper to taste
  • Fresh parsley, chopped (for garnish)

For the roasted asparagus:

  • 1 bunch asparagus, woody ends trimmed
  • 1 tablespoon olive oil
  • Salt and pepper to taste

Instructions:

1. Preheat your oven to 400°F (200°C) and line a baking sheet with parchment paper for the roasted asparagus.

2. In a large saucepan, heat the vegetable broth and keep it warm over low heat.

3. In a separate large saucepan, heat the olive oil over medium heat. Add the chopped onion and minced garlic, and sauté until translucent and fragrant.

4. Add the sliced mushrooms to the saucepan and cook until they release their moisture and start to brown slightly.

5. Add the Arborio rice to the saucepan and stir to coat the rice with the onion, garlic, and mushroom mixture.

6. If using, pour in the white wine and stir until it has been absorbed by the rice.

7. Begin adding the warm vegetable broth to the rice, one ladleful at a time, stirring continuously. Allow each ladleful to be absorbed before adding the next. Repeat this process until the rice is cooked al dente, creamy, and has a slight bite to it.

8. Stir in the nutritional yeast, dried thyme, salt, and pepper. Adjust the seasoning according to your taste.

9. While the risotto is cooking, prepare the roasted asparagus. Place the trimmed asparagus on the prepared baking sheet, drizzle with olive oil, and season with salt and pepper. Roast in the preheated oven for about 10-15 minutes, or until tender and slightly crispy.

10. Once the risotto is cooked, remove it from the heat and let it sit covered for a few minutes to thicken.

11. Serve the creamy mushroom risotto on a plate, garnished with freshly chopped parsley. Arrange the roasted asparagus alongside the risotto.
